About This Coffee

The green coffee for our Espresso Cafeina is processed dry, i.e. natural, and consists of the Yellow Catuai and Mundo Novo varieties. The coffee cherries are mechanically picked and separated according to ripeness. Then the coffee is dried on patios for 7-10 days with regular turning until it has a moisture content of less than 12%. This drying is extremely important to perfectly prepare the green beans for roasting. Afterwards, the coffee rests for about 30 days before being hulled and delivered to the Cocatrel Cooperative. The "Grupo Cafeina" is part of the cooperative. More than 1100 female producers have joined this group, which is run exclusively by women. The beans for our coffee come from only three producers in this group: Angélica França from Sitio Serra Nova, Naiara Brito Silva from Sitio Quilombo, Adalgisa Vilela from Fazenda Pinhal.
