About This Coffee

A decaffeinated coffee from Popayán, Colombia, processed using a gentle and natural sugarcane ethyl acetate (EA) method that preserves the distinctive aroma and flavor profile. The coffee is roasted as an Omni roast, suitable for both espresso and filter coffee preparation. The beans are sourced from approximately 75 coffee farmers in the Cauca region at 1700-2070m elevation, with whom the importer has established long-term partnerships. Farmers are incentivized to deliver highest quality through premium payments up to 20% above current market prices. After careful selection of ripe coffee cherries, they are depulped and thoroughly washed to remove fruit pulp completely. The beans then dry for 5-7 days on raised beds until reaching ideal moisture content. The decaffeination process uses sugarcane-ethyl acetate with water to extract caffeine while enhancing natural sweetness and preserving the aromatic profile.
