About This Coffee
This lot was harvested on January 24th, 2025, from the Buenos Aires lot at Jaramillo's farm. After harvest, the coffee cherries were pre-dried for two days on raised beds outdoors. They were then fermented for five days in a stainless steel anaerobic tank located in a cold fermentation room. The drying process was completed over 35 days in a climate-controlled drying room, an indoor facility with constant airflow and precise control of temperature and humidity.
