About This Coffee
Sandra Milena Mora owns and operates the Farm El Porvenir in Palestina in the Huila region. The 9-hectare farm has 6 hectares of coffee cultivation with around 19,000 coffee trees. Additionally, corn, cassava and bananas are grown. The fly crop harvest takes place from June to August, while the main harvest is between November and January. The coffee cherries are picked exclusively when fully ripe. They are then placed in a water basin to be cleaned and subsequently filled into GrainPro bags where they ferment for 36 hours. Afterwards, the cherries are depulped and placed together with water in ceramic tanks for a second fermentation lasting 60 hours. Subsequently, the coffee is washed, placed in bags for 12 hours and then spread on drying beds. This fermentation process is performed identically for all batches. A balanced coffee with notes of dark chocolate and caramel, accompanied by a fine berry fruitiness. Round, sweet and with clear structure in the cup.
