About This Coffee
Manos Juntas is a Micromill in Sotara, Cauca, Colombia, operated by Banexport. Their concept simplifies tasks for producers. The cherries are delivered directly after the harvest, Brix and pH values are measured and they are anaerobically fermented for five days. Nitrogen is added during this process to activate the yeasts. After fermentation, the process is stopped at 20°C. Subsequently, the coffee is dried for 30-45 days. After drying, the coffee profile is checked before the beans are processed and exported. Intense aroma of roasted cocoa beans, dried roses and cinnamon. Powerful, winey acidity meets a mild, sugary sweetness.
