This award winning coffee known for its environmental innovation and consistently outstanding profiles comes from Sicobi Coop located in Oaxaca Mexico. Sicobi Coop focuses on holistic sustainability in coffee production is the approach alongside community and environmental health, with a focus on long-term land stewardship. Six mountain communities participate, with locally trained technicians visiting farms and collecting data and advising producers. This coffee is grown at an ideal elevation of 1,500 - 1,800 meters with large temperature swings between day and night which lead to slow cherry development and more complex flavors. Selective picking along with a 48 hour fermentation give this coffee a sweet complex cup.
