Nelson is a very meticulous coffee producer, trained as a cupper by the local institute SENA, and confident in his coffee’s quality. A government organization recently gave him an eco-pulper and stainless steel fermentation tank, allowing him to achieve a long (for washed coffees) 36 hour anaerobic fermentation that boosts flavors while resulting in maximum cleanliness in the cup profile.
