Carmen Estate is located in Paso Ancho, Tierras Altas, Chiriquí Province, Panama. This batch was grown at 1,900 meters altitude. Paso Ancho has rich volcanic soil and a unique microclimate, recently recognized as one of the finest coffee regions. Coffee details: • Processing: Hand-picked uniformly ripe red cherries, depulped, mechanically dried, and machine/hand-sorted. Cupping notes: 1. Cane sugar, mild brown sugar, honey; papaya and honey in the cup. Mid-temperature sweetness increases (92–94 pts, sweetness ++); cooling reveals bright yellow lemon, kiwi, sweet-tart (92.5 pts). 2. Floral, nectarine, brown sugar fudge (92.75 pts). 3. Aroma: Vanilla, black tea, nougat; palate has citrus peel, floral notes when hot; orange peel, black tea, plum, brown sugar, soft floral, orange blossom, silky texture. Cooling reveals black tea, fresh orange peel, orange blossom, plum. 4. Chocolate, honeysuckle, juicy, with raspberry, red apple, brown sugar, apricot. 5. Jasmine, bergamot, violet, red apple, jackfruit, rounded flavor.
