About This Coffee
This is insane. Chire is a high-altitude microregion in Kere Woreda, in the heart of Ethiopia's Sidamo – a place long renowned for exceptional coffee quality. The local processing station, Chire Washing Station, prepares coffees using both washed and natural methods. Behind every cup are over 900 small-scale farmers who cultivate coffee on tiny 1–2-hectare plots. Small farms, fertile soil, and high-altitude cultivation result in beans full of character and juicy complexity. However, Chire is not just about coffee – alongside coffee bushes grow enset, called 'false banana,' and creamy avocados. It's a landscape of abundance where coffee ripens slowly, gaining sweetness and juiciness. Just like this washed lot before you – black tea, red apple (sweet, firm, and juicy), and creamy vanilla. - To jest obłęd. Chire to położony wysoko w górach mikroregion w Kere Woreda, w sercu etiopskiego Sidamo – miejscu, które od lat słynie z wyjątkowej jakości kaw. Tutejsza stacja obróbki, Chire Washing Station, przygotowuje kawy zarówno w obróbce washed, jak i natural. Za każdą filiżanką stoi ponad 900 drobnych farmerów, którzy uprawiają kawowce na niewielkich, 1–2-hektarowych działkach. Małe gospodarstwa, żyzne gleby i wysokość upraw przekładają się na ziarna pełne charakteru i soczystej złożoności. Region Chire żyje jednak nie samą kawą – obok krzewów kawowca rosną tu także enset, nazywany „fałszywym bananem”, oraz kremowe awokado. To krajobraz obfitości, w którym kawa dojrzewa powoli, nabierając słodyczy i soczystości. Dokładnie jak ten myty locik przed Wami – czarna, słodka herbata, czerwone jabłko (słodkie, twarde i soczyste) oraz kremowa masa waniliowa. Obłęd.
