About This Coffee

The Alvarez family, owners of "El Borbollon," have been growing coffee in El Salvador for over 100 years. The Alvarez brothers are already the fourth generation to cultivate coffee in this exceptional region. The excellent growing conditions and commitment to sustainable farming methods have helped them harvest the best coffee cherries, which are processed at the "El Borbollon" processing plant, run by family member Eduardo Alvarez. The hand-picked beans come from surrounding farms. They are collected in traditional, hand-woven baskets by pickers specially trained to select only the best and fully ripe coffee cherries. Upon arrival at the El Borbollon mill, the cherries are sorted by farm and/or quality. Once the cherries are depulped and naturally fermented, they are washed and dried on clay patios or raised beds to reach their optimal moisture content. The dried beans are then stored in wooden silos or sacks, where they rest until hulling. After hulling, El Borbollon cleans the beans once more before they are packed and prepared for export.
