Sweet Geisha with an elegant and floral character. Intense sweetness and very mild acidity in the aftertaste. Fully ripe Geisha cherries with a BRIX value of 21-24. Anaerobic fermentation in nitrogen-filled tanks for approximately 50 hours with temperature and pH monitoring. Washed and dried on a three-stage drying bed system. Extended resting period under controlled conditions.
