What started out a little bit of fun, turned out to be a very tasty occurance! After cupping both the washed and natural, I found that while both really good, they each lacked what the other one had. The washed was floral, acidic and crisp but lacked some body and sweetness and the natural wasn't as vibrant in flavour but had loads of body and sweetness, so playing with some ratios we found that the 50/50 gave the best balance and created an exciting and delicious new flavour profile!
