About This Coffee
Special! In the processing of this coffee, the cherries are first mechanically depulped, leaving a significant amount of fruit mucilage on the beans, which contributes to the development of sweetness and body of the coffee. The beans then undergo a carefully controlled anaerobic fermentation process, where the coffee is stored in Mossto (a juice from coffee cherries) for about 72 hours.
