This exceptional Red Bourbon comes from Colombia’s southern Cauca region, where the relatively even terrain provides stable, ideal conditions for growing high-quality coffee. Sourced from smallholder farmers near Granja Paraiso 92, the cherries are handpicked at peak ripeness and delivered to the cutting-edge processing facility of Wilton Benitez in Piendamo. There, the coffee undergoes a carefully controlled 36-hour fermentation, followed by depulping, washing, and meticulous drying.
