About This Coffee

Sourced from the highlands of Yirgacheffe in southern Ethiopia, Chorso Bule represents a micro lot that feels both classic and quietly distinctive. Yirgacheffe, located within the Gedeo zone, is one of the most revered coffee-growing regions in the world. At elevations exceeding 2400 meters, cherries mature slowly in cooler conditions, allowing for greater sugar development and more refined acidity. The result is a cup that carries both clarity and depth—hallmarks of truly high-altitude coffee. This particular lot is built from the work of 11 smallholder farmers, each cultivating small garden plots using traditional Ethiopian landrace varieties. These are not uniform cultivars, but naturally evolved genetics—complex, diverse, and deeply tied to place. It’s this diversity that gives Ethiopian coffee its unmistakable character. All cherries are handpicked at peak ripeness and delivered to the Chorso Bule washing station, a relatively lesser-known site in the Gedeo district that has recently gained attention for its precision and clarity in cup profile. Despite being a newer name, it reflects the rising quality coming out of this sub-region. The coffee is processed using the natural dry method, where whole cherries are dried slowly over 25 days on raised African beds. At this altitude, drying is extended and controlled, allowing fruit-driven flavors to develop without overwhelming fermentation. The result is expressive, but clean—structured rather than heavy.
