About This Coffee

Whole bean light roast. Handpicked ripe cherries (Brix 22-26), cold water floated, 12 hours oxidation in cherry, 24 hours submerged fermentation with must, depulped with 60-hour anaerobic fermentation, thermal shock at 50°C for 30 minutes, mechanically dried for 36 hours.
