About This Coffee

This Tabi was selected from Wilton's varietal blocks and submitted to a 72-hour anaerobic in-cherry fermentation using carefully chosen yeast strains to push sweetness and flavour clarity. Direct Coffee After fermentation the beans are dried slowly under controlled conditions to retain structure and highlight nuance. The result is a filter coffee with jammy raspberry, crisp lemonade notes and a floral lift of orange blossom, all balanced by a smooth, clean finish.
