About This Coffee

This coffee was grown by Luis Anibal Calderon, one of Colombia’s most innovative producers, at his farm Villa Betulia in Acevedo, Huila. The Ombligon variety is a rare selection derived from Ethiopian heirloom seeds. Over several years, Luis carefully studied its growth behaviour and unique morphology. The cherry is elongated and features a small protrusion at the base, resembling a belly button – which inspired the name Ombligon, from the Spanish word for navel. Cherries are harvested at peak ripeness and go through a 30-hour underwater fermentation, followed by pulping and gentle washing. Drying is performed under temperature-controlled conditions to preserve flavour clarity and sweetness. What makes Ombligon special isn’t just its unique shape – it’s the cup it produces. This lot shows how traditional processing and patient farming can reveal outstanding results in a lesser-known variety.
