Sourced from our friends at Pergamino (now a decade-long relationship in Colombia), comes this remarkably bright and clean offering from Antioquia. Pergamino also operates one of the best micro mills for specialty coffee which holds major sway over quality and informs the final cup. Notice the Malic acidity in the form of green apples upfront followed by tannins like oolong tea, performing well on both filter and espresso.
