About This Coffee

This natural processed, thermal shock Ombligon is one of the most intense coffees we have ever roasted. With layered, high sweetness, this micro-lot propelled itself to the number one spot at the WBC in 2022, and has since garnered many more accolades. We have partnered with Lohas in Colombia to bring this specially processed Ombligon from the world stage to your cup. Despite being in his early-twenties, Nestor Lasso has captivated the competition coffee scene with coffees from the famed El Diviso. Hailing from a coffee production backgroud, the two sons of traditional coffee farmers made the choice to either move to the city or to give coffee a go. Since, they have proven the model that coffees from Colombia remain underrepresented not only within the coffee industry, but as a luxury beverage worthy of a global stage. Coffees from El Diviso have gone to win national and world championships, on top of a burgeoning partnership of global roasters. The defining characteristic of this project is the innovative processing- the coffees undergo a rigorous multi-stage oxidation and anaerobic fermentation. Upon picking, the coffees are oxidized within circulating mosto for up to 48 hours, then entered into a 36 hour thermal shock with inoculation. The resultant cup is heavily laden with a silky tactile as well as a tremendous red fruit note throughout the drinking experience. The acidity is tart throughout, reminiscent of raspberry and tart candy. The Ombligon variety is believed to have roots among Ethiopian Heirloom varieties, imitating similar behaviors and flavor characteristics to other east-African natural mutations that have recently revealed themselves in Latin America. Ombligon makes a strong case for this argument with its indisputable abundance of berry acidity and sweetness. These traits, combined with stellar processing by Nestor Lasso at Finca El Diviso, earned the variety a position in the World Barista Championship finals in 2023, where it was served with an intriguing list of flavor notes such as ripe raspberry, red cherry, and boysenberry ice cream.
