About This Coffee

A truly noble bean from Thailand. Prune, rum and a bit of nougat. The ripe cherries are exclusively hand-picked, then floated in basins and wet depulped. The beans are fermented for 36 hours (a little longer or shorter depending on the weather and the time of the season). After that, the beans are washed so that any remaining fruit flesh or defective beans become visible and can be sorted out. For another 24 hours (+/- 12 hours depending on the weather), the beans come back into tiled basins with fresh water and are constantly stirred. After another wash, they come for 12 -22 days (depending on the weather and the time of the season). After at least 1 to a maximum of 4 months, the size sorting and preparations for shipping to Hamburg take place.
