About This Coffee
Anaerobic washed sidra from Vinka featuring fun flavors of cherry cola, papaya, and floral vanilla. Produced by owners Carlos and Maria Fernanda, milled by Fabricio Coronel of Hacienda La Florida (2023 Ecuador Cup of Excellence #4 winner). Second harvest of sidra crop. Fermented anaerobically using yeast strains isolated from the farm. After washing, dried in three stages: 10 days partial drying, 10 days enzymatic rest, 10 final days drying.
