From DAKA washed Chiroso with more sweetness than the process usually gives you: forest fruits gelato, black tea, and florals. Grown by Jorge Rojas at Finca El Proceso. After each harvest day, the cherries came down to his La Roca plant in Planadas, where they were floated to remove defects, pulped, left to rest overnight, and washed the next morning. Fifteen days drying in marquesinas after that.
