Sudan Rume is a natural mutation of bourbon discovered in the South Sudan mountains of Marsabit. Low yielding variety processed using double-anaerobic thermal shock method with ozone sanitization, two-stage fermentation (48-hour whole cherry submersion, 24-hour Lactobacillus pulped fermentation), thermal shock with hot and cold rinses, and rapid drying with Eco-Enigma dehumidifying dryer.
