About This Coffee

Nui and Aoy are second-generation coffee farmers whose passion and grit are evident in their exceptional coffee quality. Farming on steep slopes with limited resources, this requires a careful approach at every stage of the process. However, these challenges have only encouraged them to explore and experiment with new techniques to bring out the true potential of their coffee. The coffee cherries were washed to remove dirt and separated to discard the floaters. The cherries were then placed in oxygen-free fermentation tanks with valves that allow carbon dioxide to escape for 5 days to allow the naturally occurring microorganisms to consume sugars and begin the fermentation process. After fermentation, the coffee was transferred to raised beds and dried under shade for 45 days until the moisture content reached 10%, resulting in a complex and fruity cup.
