
EL TREBOL DECAF
About This Coffee
Our EL TREBOL is a true Specialty Coffee Decaf. This decaf comes from the Santander region in Colombia from the 'Women Association EL Trebol'. The 'El Trebol' women's association consists of 74 women-led farms. The women work on their farms as pickers and farm administrators. They rely on coffee cultivation to support their families. The association was formed out of the necessity to sell coffee above market price. Our EL TREBOL DECAF is decaffeinated using the Sugar Cane E.A. method. This is a natural method to remove caffeine from the bean. First, the raw coffee bean is swollen with steam to facilitate caffeine extraction. This is done through a bath of sugarcane ethyl acetate, and then the bean is dried back to its pre-decaffeination level. The decaffeinated coffee retains most of its aromas through this process. We taste chocolate cookies, sugarcane, and blackberry. The decaf has a fine, subtle acidity and a lot of sweetness.
