About This Coffee

This is a stellar coffee from our friend and award winning producer Pepe Jijon. Our fourth harvest working with Pepe Jijón and Finca Soledad, we continually love the excellence of his work and the unique, sweet profiles of his coffees. This coffee, his Ty-Oxy Typcia Mejordao from Finca Soledad, arguably as his most beloved coffee and this crop is easily his best yet. This is an Extra-Light variant of our light roast of Pepe's Ty-Oxy Mejorado. Extra-Light variants are recommended for experienced brewers only, willing to wait 4-5 weeks rest minimum for best results. Extra-Light roasts sacrifice initial intensity and sweetness for clarity.
