About This Coffee

This coffee is a snapshot of place, grown at the edge of Panama's Mount Totumas Cloud Forest, where high elevation, rich biodiversity, and ecological stewardship converge. Originally cow pasture, the land was transformed by Jeffrey Diedrich and his brother into a reforested haven, with native nitrogen-fixing trees and wildlife enriching the soil naturally. Only six hectares are planted with coffee, including this rare Pache variety. The cold fermentation washed process enhances clarity and structure while preserving the purity of the terroir. We've roasted it ultra-light to let the nuances shine. Expect a clean, balanced cup with crisp acidity, subtle sweetness, and a wild elegance born of the cloud forest itself.
