About This Coffee
El Campo originates in Callayuc, in the province of Cutervo (Cajamarca, northern Peru), between 1,800 and 2,000 meters above sea level. In this area, marked by protected cloud forests and micro-watersheds that sustain the balance of the local ecosystem, five producers—José Manuel Silva Soberon, Iván Silva, Marino Tello, Felisinda Valdivia, and Flor Silva Valdivia—work small high-altitude plots, cultivating Yellow and Red Caturra varieties alongside Pache. The combination of warm mountain climate, fertile soils, and a main harvest between June and September allows for the development of coffees with clean structure and mature sweetness. El Campo is a community lot that began with a search: after discovering an exceptional cup at a cupping table in 2020, direct contact with the community was initiated. What started with a motorcycle visit and face-to-face conversations became a sustained relationship over time. Five harvests later, the quality remains steadfast, solidifying this project as a consistent expression of Cajamarca. The process is washed, with fermentations lasting over 48 hours and a drying period of 7 to 10 days that preserves clarity and definition in the cup. The result is a fruity and chocolaty profile, with notes of white grape and papaya that bring freshness and brightness, balanced by caramel and milk chocolate that build a sweet and rounded finish. It has medium body, medium-high acidity, and a score of 85.5. Its omni roast makes it versatile, allowing exploration of both filter and espresso methods without losing structure or balance. El Campo represents the strength of community lots when trust and continuity sustain the project. A coffee that combines Andean landscape, collective work, and a story that began with a cup worth pursuing.

- El Campo nace en Callayuc, en la provincia de Cutervo (Cajamarca, norte de Perú), entre los 1.800 y 2.000 metros sobre el nivel del mar. En esta zona, marcada por bosques nublados protegidos y microcuencas que sostienen el equilibrio del ecosistema local, cinco productores, José Manuel Silva Soberon, Iván Silva, Marino Tello, Felisinda Valdivia y Flor Silva Valdivia, trabajan pequeñas parcelas en altitud, cultivando variedades Yellow y Red Caturra junto a Pache. La combinación de clima cálido de montaña, suelos fértiles y una cosecha principal entre junio y septiembre permite desarrollar cafés de estructura limpia y dulzor maduro. El Campo es un lote comunitario que comenzó con una búsqueda: tras descubrir una taza excepcional en una mesa de cata en 2020, se inició el contacto directo con la comunidad. Lo que empezó con una visita en moto y conversaciones cara a cara se convirtió en una relación sostenida en el tiempo. Cinco cosechas después, la calidad se mantiene firme, consolidando este proyecto como una expresión constante de Cajamarca. El proceso es lavado, con fermentaciones de más de 48 horas y un secado de 7 a 10 días que preserva claridad y definición en taza. El resultado es un perfil frutal y achocolatado, con notas de uva blanca y papaya que aportan frescura y luminosidad, equilibradas por caramelo y chocolate con leche que construyen un final dulce y redondo. Presenta cuerpo medio, acidez medio-alta y una puntuación de 85,5. Su tueste omni lo hace versátil, permitiendo explorar tanto métodos de filtro como espresso sin perder estructura ni equilibrio. El Campo representa la fuerza de los lotes comunitarios cuando la confianza y la continuidad sostienen el proyecto. Un café que combina paisaje andino, trabajo colectivo y una historia que comenzó con una taza que valía la pena perseguir.
