About This Coffee
Partner: CATA, Farmer: Alex Bermudez. Very sweet, red-fruit led, and endlessly drinkable decaf. Clean, comforting, and quietly vibrant. Cherries picked very ripe, then double-fermented with El Paraíso's house 'Red Plum' yeast culture. First anaerobic cherry soak (~36 hrs) builds aromatic precursors; after pulping and demucilaging, second fermentation (~12 hrs) with tailored culture fixes precursors to seed under pressure. Thermal-shock wash follows, locking in flavour, before low-temperature dehumidifier drying. Decaffeinated in Colombia using EA (ethyl acetate) method with sugarcane-derived solvent.
