About This Coffee
Gilder's coffee farm is located in the Nueva Tacabamba village, within the Pinto Recodo district in the province of Lamas, San Martin region. The farm spans 4 hectares, and coffee is cultivated alongside bananas for added income and native tree species of inga and pacay for natural shade. The coffee undergoes a rigorous post-harvest process including selective harvesting of ripest cherries, Brix measurement, water flotation, and anaerobic fermentation in sealed GrainPro bags for 10 days with pH monitoring, followed by 18 days of solar drying to approximately 11% moisture content.
