About This Coffee

Cherries are hand-selected cherries at peak ripeness. The fruit is removed and the beans are sealed in tanks filled with circulating carbon dioxide, where temperature and pH are closely watched throughout fermentation. Once that's complete, the beans are dried on shaded raised beds, then rested in airtight bags for 60–90 days to develop their aromatic complexity. A final round of hulling and sorting ensures only the best make it into the bag.
