About This Coffee
The cherries were harvested, cleaned with ozonated water, and then put under ultraviolet light to reduce microbial load. Then the coffee was subject to an ultrasound process to open up the coffee. The cherries were then anaerobically fermented with yeast in a pressure-controlled environment for 52 hours. The coffees are then washed and undergo controlled drying.
