About This Coffee
This Castillo and Colombia lot underwent an extended fermentation inside sealed tanks with addition of coffee cherry juice from prior batches. A very drinkable cup. When I cupped this, I found the resulting profile as lightly sweet, medium amount of dry fruit, and mild funk.
