Specialty coffee microlot from Finca Las Margaritas featuring Sudan Rume variety. Hand-picked cherries sorted by ripeness and density, processed with two-stage fermentation (18 hours open tank, 24 hours oxygen-rich), thorough wash, and controlled mechanical drying at 38°C for 3-5 days. Exhibits floral, fruity, and sweet notes characteristic of the region.
