About This Coffee

Manos Juntas is a micro-mill in the Sotara region of the Colombian Cauca region. The coffee was purchased in cherry form at the mill on harvest day and subjected to a five-day anaerobic fermentation in hermetic tanks, with nitrogen introduced. After fermentation, the coffee was exposed to a temperature of 20°C to stop the fermentation.
