Gaitania is sourced from Indigenous smallholders in southern Tolima, where coffee farming is organized collectively and processed at the community level. Farms sit along the Central Andes, with cooler temperatures and steady rainfall supporting slow, even cherry development. Washed processing keeps the profile clear and focused, allowing the character of the region to come through cleanly. The cup leads with red fruit sweetness, followed by gentle citrus and a light brown-sugar warmth. The body stays composed and smooth, finishing dry and resolved. An easy-drinking coffee with steady structure, shaped by place and careful cultivation.
