'Shade Slow Dried Natural' involves spreading coffee cherries on raised beds, covering them with shade cloth to slow down the drying process, and frequently turning the cherries to allow sugar to evenly penetrate the beans, enhancing sweetness and flavor complexity. We use a medium roast to preserve the berry and dried fruit flavors of this Ethiopian coffee, bringing out a brown sugar-like sweetness and cocoa notes.
