About This Coffee
The majority of this blend is one that stood out right away, a Catuai fermented with Kveik yeast, an experiment that we've conducted before in Guatemala and loved the results. This strain of yeast can handle higher temperatures, making it a great match for the warmer climate at Finca San Jeronimo. We've found this coffee to have loads of red fruit notes - pomegranate, cherry, currant, and so on! While we love the bright fruit notes of this coffee, we paired it with a washed Peruvian coffee from the northern part of the country, San Ignacio, called "Las Damas," which has more of a rich, earthy profile that helps to create balance in this blend!
