About This Coffee

La Berlina is an heirloom varietal originating from the Gesha region in Ethiopia, first identified in the forests near Mount Gesha before being propagated globally. Produced by Casa Ruiz, this lot is cultivated in the Volcán Barú region of western Panama at approximately 1700 masl. The elevation plays a critical role in slowing cherry maturation, increasing sugar accumulation, and enhancing density in the seed structure. Combined with volcanic soil rich in minerals, this creates a foundation for high cup complexity and aromatic intensity. The cultivar is Gesha, known for its elongated seed structure, low yielding trees, and delicate agronomic profile. It requires meticulous farm management due to its susceptibility to environmental stress and relatively low productivity compared to more commercial varieties. Processing is done using a washed method. Cherries are selectively harvested at peak ripeness, then depulped. The seeds, still covered in mucilage, undergo controlled fermentation to break down sugars and pectins. This fermentation phase is closely monitored to maintain clarity and avoid over fermentation character. After fermentation, the coffee is washed to remove residual mucilage and then dried under controlled conditions until stable moisture content is achieved. Drying typically targets a final moisture level of around 10–11%, ensuring preservation during storage and transport while maintaining structural integrity of the bean. Post harvest handling focuses on uniformity and stability, with attention to screen size consistency, density sorting, and defect removal to preserve the integrity of the lot.
