A natural process lot of the rare Ombligon variety, sourced from Finca El Diviso, a coffee farm stretching across the highlands of Colombia's Huila region. Operated by Nestor Lasso and his family, this farm pioneers new frontiers in speciality coffee by blending traditional cultivation with cutting-edge processing techniques. Beginning as a family-run coffee farm, El Diviso's passionate approach and commitment to quality have earned high acclaim from roasters worldwide and at international competitions. This lot employs the natural process to preserve the ripe sweetness of the cherries, drawing out the beans' inherent rich fruitiness and complex flavours. Bright, vivid notes of passionfruit and prune are present, alongside the opulence of rich, red wine-like red grapes and dark cherries. A sweetness reminiscent of bubblegum and candy is felt, beautifully balanced by a high-cacao chocolate sweetness and bitterness with a milky texture in the finish. It represents a quintessential cup of recent specialty coffee. Its complex layers of flavour ensure a fruit-forward, assertive cup whether brewed as filter or espresso. It retains its distinct character even when combined with milk, making it a versatile coffee suitable for enjoyment as espresso or latte.
