About This Coffee

This coffee has the taste of many yellow fruits such as mango, banana and orange while warm changes to red fruit flavours such as cherry, plum and watermelon as it cools down. This coffee offers many fruit flavours. This Wush Wush variety is originally from Ethiopia and is a clean coffee with a fruitiness and sweetness like Geisha variety (even beyond). When we released the Ethiopian Wush Wush in the past, we had many repeat customers. This time it is from Colombia, the growing environment and processes are thoroughly controlled in this farm. The cherries are carefully hand-picked, then sorted by its density and undergo 120 hours of anaerobic fermentation with cherry skins on. During this time, the temperature is controlled to maintain an environment conducive to anaerobic bacteria activity. Once fermentation is complete, the cherries are slowly dried over a long period of time (40-60 days), which results in the formation of a very obvious sweet flavour. Fermentation again during the drying process also creates this enticing acidity and sweetness.
