Indonesia Frinsa Sarapan#2
About This Coffee
A coffee with gentle pear and fig sweetness, crisp apple/lime acidity, and a finish that shifts from oolong tea-like warmth to earthy petrichor as it cools. Uniquely Indonesian yet unconventional for the region. This washed lot (not natural) from the popular Frinsa Estate uses lactic fermentation. 'Sarapan' means 'breakfast' in Bahasa Indonesia, reflecting this washed process's mellow depth and delicate beauty. Located at 1,400m, Frinsa Estate prioritizes ventilation, drying mills, and meticulous quality control from harvest to export. Their team tackles climate challenges while mastering processing for clean flavors. Method: Washed Lactobacillus—probiotics added post-pulping for refined fermentation (15-18 hrs), followed by 10-12 hrs soaking. Pre-dried in greenhouses before patio/machine drying (14-20 days). Innovations like greenhouse pre-drying address Indonesia's humidity. While most local producers use wet-hulling for specialty coffee, Wildan focuses on washed processing, aiming for socio-economic impact, water conservation, and reforestation.
