About This Coffee

Field blend from Nestor Lasso's family-run farm El Diviso in the highlands of Bruselas. Cherries hand-picked at 13-16° Brix, float sorted, UV disinfected, followed by 24-hour oxidation. After depulping, parchment fermented for 20 hours in open-air, then dried for 15 days under parabolic covers.
