When we first discussed offering coffee from established, quality international coffee roasteries; the first roaster mentioned was Tim Wendelboe. Tim's roasting style helped define the modern specialty movement and his commitment to green coffee quality and transparency continues to lead the industry decades after his rise to prominence. This lot from Echemo shines under Tim's approach. The quality of the green shines with quintessential cooling, almost mint-like fragrance. In the cup there's excellent balance and structure, nectarine and white sugar. Truly a fantastic example of everything that an Ethiopian washed process coffee can be.
