About This Coffee

This natural lot comes from smallholder farmers in Joyabaj, Quiché, processed at the Joyabaj Wet Mill—established in 2021 to centralize ripe cherry collection from 13 surrounding municipalities. After an initial wash and float, the cherries undergo an 8-hour fermentation in the husk before moving to patios and raised beds for 8–10 days of slow, carefully monitored drying. Grown between 1,600–1,700 meters, the region's cool highland climate helps preserve sweetness while developing layered fruit depth. The profile is nostalgic and warmly fruited: mandarin & berry pie tones give the cup a cozy, jammy sweetness, while grounding black-tea structure adds clarity and balance to the finish. A beautifully textured natural from Quiché.
