Farm: El Silencio - Coffee from Sara Gutierrez. On the Finca El Silencio in Buenavista, Quindío, fifth-generation coffee farmer Sara Gutierrez cultivates high-quality coffee in harmony with tradition and modern processing. The farm benefits from a unique microclimate created by warm valley winds and cool mountain air, allowing a slow maturation of the cherries. Surrounded by walnut, guamo, and banana plants, the coffee trees grow in natural shade - ideal conditions for exceptional quality. Only the ripest cherries are carefully hand-picked, doubly selected, and fermented for 168 hours in cool places. They then dry gently on African beds before being stored for stabilization. The result is a complex, elegant coffee that embodies the terroir of Buenavista and the knowledge of generations.
