Produced by Acácio José Dianin and his team on the family-owned fazenda located in Cerrado Mineiro, Brazil. This coffee is a cultivar of the classic Mundo Novo variety. Once the cherry harvest is complete, the cherries are dried naturally in the sun for approximately 14-20 days. This roast is gently developed for espresso, offering balanced acidity, smooth chocolatey body, and caramel sweetness with a hint of hazelnut and a sweet jammy-ness that reminds us of plums.
