Raised in Bruselas, Jhonaton shifted from a quantity-first mindset after studying ecological agriculture and returning from a near-professional soccer career. Under the Zarza Coffee name, his washed process is anything but standard. Ripe cherries are hand-picked, floated, sealed for 24-36 hours, pulled, open-fermented, then finished with a thermal shock wash to stablise both sugars and aromatics. Alongside biodiversity initiatives like beekeeping, Zarza Coffee delivers elegant coffees loved all over the world.
