About This Coffee
This coffee begins with selective harvesting, guaranteeing a minimum of 80% ripe cherries. Freshly picked cherries are floated to remove any green, overripe, or dry cherries before processing begins. The cherries undergo a 12-hour oxidation period in food-grade plastic bins, then are dry pulped. A post-pulping oxidation stage follows for 24 hours, washing and removing 80% of the mucilage at 45°C — a deliberate thermal shock that shapes the cup's complexity. Fermentation takes place aerobically over 36 hours at temperatures below 25°C with specific yeast cultures. The coffee is then mechanically dried for 76 hours at an average temperature of 40°C before being stabilized in GrainPro bags for transport.
